Prepare the ingredients
Finely chop the celery, carrot, onion, and garlic.
In a saucepan over medium heat, cook the onion, carrot, garlic and celery with 1 Tbsp of olive oil (double for 4 ppl.) until tender, about 5 min. Add thyme sprig.
Cook the meat
In the same pan, add the sausage meat, season with salt and pepper to taste. Break the sausage meat into pieces using a wooden spoon. Cook, stirring occasionally until the meat looses its pinkish color and begins to brown, about 10 min.
Increase the heat to "high" and add tomatoes with their juices and oregano and cook for 1 minute.
Cover and simmer over low heat for 5 min
or until the meat reaches an internal temperature of 160 F.
Cook the pasta
Meanwhile, cook the pasta in a large pot of salted boiling water for 8-10 min. Drain, reserving cooking water (½-1 cup). Pour the drained pasta into the saucepan with the meat.
Finish cooking and serve
Add a little pasta cooking water if the sauce is too thick. Drizzle with olive oil and sprinkle with cheese. Serve in deep dishes or bowls.
