Prepare the ingredients
Preheat oven to 400°F
Slice the celery, the carrots lenghtwise and the mushrooms. Peel and slice the onion. Cut the potatoes into quarters. Break the cauliflower into florets. Mince the garlic.
Dissolve 1 broth cube in 2 cups of boiling water (double for 4 ppl.). Set aside.
Cook the vegetables
In a pot, place all vegetables, the garlic, the smoked paprika, the thyme, the broth and the white wine. Salt and pepper. Bring the contents of the pot to a boil and cook, covered, for 10 min.
Let it rest for 5 min.
Cook the fish
On a baking sheet lined with parchment paper, place the cod fillets and baste with olive oil. Season with the Cajun mix
(to taste - spicy!). Bake for 10 min or
until the internal temperature is 63°C.
Finish the cooking and serve
Divide the vegetables into deep plates and top with cod fillets and vegetable cooking liquid. Season with salt and pepper to taste.
