Prepare and cook the rice
Bring water and rice to a boil in a pot over high heat, reduce heat to low and cover. Cook 15-20 min or until the water is absorbed, then remove from heat and let the rice stand covered for 5 min. Fluff lightly with a fork.
While the rice is cooking, prepare the ingredients
Chop the onion and the coriander. Zest and press the lime juice. Incorporate the chopped coriander, the lime juice and zest to the cooked rice.
Prepare the meatballs
In a bowl, mix the breadcrumbs, the ground beef, the egg and the chopped onion to form a smooth mixture. Form meatballs the size of a golf ball.
Cook the meatballs
In a pan, heat the olive oil over medium heat and cook the meatballs for 3-4 min, stirring a few times, to brown. Remove from the pan and reserve in a plate.
Prepare and cook the sauce
In the same pan, bring the honey, the soy sauce, the hoisin sauce and the rice vinegar to a boil. Add the meatballs to the sauce and simmer over low heat for 5-8 min.
Finish and serve
Add the cabbage mixture to the pan with the meatballs, mix and let cook 3-4 min more. Serve meatballs over rice.
