Cook the rice
Bring salted water for rice and rice to a boil in a pot over high heat. Reduce the heat, cover and let simmer for 15 minutes or until all water is absorbed.
Prepare the chicken
Cut the chicken into cubes. In a bowl, mix the chicken with the cornstarch.
Prepare the ingredients
Chop the yellow onion, the garlic, ginger and red pepper. Reserve.
Cook the ingredients
In a wok or a large pan over high heat, sear the chicken in the vegetable oil for 4 minutes, stirring regularly. Add the chopped vegetables and sauté for 2 minutes.
Continue the wok
Add the peas and cook 2 minutes more.
Thinly slice the green onion.
Finish and serve
Add the plum sauce and the sambal oelek to the wok and mix to combine.
Divide into bowls with rice and garnish with green onions.
