Cook the meat
Preheat a BBQ or grill pan over medium heat
Season pork with salt and pepper. Baste pork with half of the hoisin sauce. Grill pork, turning a few times, for 18-20 minutes,
or until the internal temperature is 160F. Set aside.
Meanwhile, prepare the ingredients
Bring a large pot of salted water to a boil.
Peel and mince ginger. Thinly slice the green onion, separating the green and white parts. Julienne (thin slices) the red pepper.
Prepare the peanut sauce
Juice the lime.
In a bowl, whisk the soy sauce, lime juice, sambal oelek, peanut butter, salt and pepper. Set aside.
Cook the noodles
Cook the noodles in the boiling water for 3 minutes. Drain and set aside.
Cook the vegetables
Heat the oil in a pan over medium-high heat. Add the ginger and white part of the green onion and cook for 1-2 minutes. Add carrots, red pepper, salt and pepper and cook, stirring, for 1-2 minutes.
Finish and serve
Add the noodles, reserved peanut sauce and 1/4 cup of water (double for 4 ppl.) to the pan and cook, stirring, for 1-2 minutes.
Thinly slice pork and serve with the veggie noodles and remaining hoisin sauce on the side. Garnish with the green part of the green onion.
