Prepare the patties
Heat a BBQ or grill pan over medium-high heat
In a bowl, mix the chicken with the egg, breadcrumbs, salt and pepper to taste. Form patties and set aside.
Prepare the toppings
Thinly slice the onion and the fig.
In a pan over medium heat, add 1 Tbsp of olive oil (double for 4 ppl.) and the onions. Cover cook for 10 minutes, stirring from time to time.
Add the fig, wine, half of the balsamic vinegar and some salt to the pan. Stir, cover, reduce the heat to medium-low and simmer for 5 minutes.
Cook the patties
Meanwhile, cook the patties on the grill for 5-7 minutes each side, or until done.
Prepare side salad & serve
Assemble the salad by tossing the arugula with 1 Tbsp of olive oil (double for 4 ppl.), remaining balsamic vinegar, and nut mix (sunflower seeds, sliced almonds)*. Assemble the burgers by topping the buns with a patty and a generous scoop of the fig-onion mixture.
Serve with salad.
