Marinate the chicken
Mince the garlic. In a large bowl, mix the minced garlic, sambal oelek, olive oil, spice mix* and some salt to taste.
Cut the chicken into pieces. Add the chicken, mix to coat and let marinate in the fridge for 10 min (or up to 2 hours).

Boil some water for couscous
Prepare the couscous while chicken marinates
In a pan over medium-high heat, quickly toast the dried couscous, about 2 min. This will give it a nutty flavour. Transfer to a bowl and pour boiling water over until it passes by 1 cm. Cover with cling wrap and leave for 5-10 min or until all water has been absorbed.
Prepare the skewers
Preheat a BBQ or grill pan over medium-high heat. Remove chicken from the marinade and discard marinade. Thread chicken pieces onto skewers, alternating with bell pepper and tomatoes.**** Sprinkle with salt and grill for 4 min on each side, or until cooked through.
Finish and serve
Roughly chop the mint and stir it into the yogurt. Serve the brochettes with couscous and yogurt sauce.
