Prepare the ingredients
Chop the onion and the chives. Remove leaves from stem of thyme. Cut the hard bottom part from the asparagus.
Cook the asparagus
Cook the asparagus in a pot of boiling water for 3 minutes. Rinse under cold water and set aside.
Prepare the cauliflower rice
Add 1/3 of the olive oil to a pan, juice the lemon over it and add chives, onions, cauliflower rice and 1/2 of the thyme. Sauté the mixture over medium for about 2-3 minutes. Season with salt and pepper and
Sear the shrimps
Peel the shrimps and heat the 1/3 of the oil in a pan over medium-high heat. Season shrimps with salt and pepper. Add shrimps to the pan and sear 3 minutes a side. Deglaze with the cooking wine.
Prepare the tomatoes
Dice the cherry tomatoes. Mix with remaining olive oil and remaining thyme. Season with salt and pepper.
Serve the cauliflower rice with the asparagus, shrimps, and tomatoes.
