Prepare the ingredients
Preheat the oven to 400F. Slice thinly the merguez. Cut the apples into small quarters. Coarsely chop pecans.
Grill merguez and apples
In a large skillet, brown merguez and apples in half the oil for 6-8 minutes or until the merguez slices are cooked thought.
Deglaze with vinegar and add remaining oil, mustard and honey. Let reduce 1 min. Season with salt and pepper.
Toast the baguette
Cut the baguette in half lengthwise and spread the butter and sprinkle with oregano. Place the baguette on a baking sheet lined with parchment paper. Toast 10 min in the oven.
Serve the merguez and apples hot or warm with grilled baguette on spinach and garnish with pecans.
