Cook the pasta
Bring a large pot of salted water to a boil. Add pasta and cook for 8 minutes or until al dente. Drain and rinse the pasta in cold water to prevent sticking.
Meanwhile, prepare the ingredients
Slice the leek into thin slices.
Mince the garlic.
Cut the tomatoes in half.
Cook remaining ingredients
In an oiled frying pan, separate the sausage meat with a spatula and cook over medium-high heat for 6-8 minutes.
Add the leek, garlic and tomatoes to the pan and cook 2-3 more minutes.
Pour in wine, reduce heat and simmer for 2-3 minutes. Season with salt and pepper to taste.
Add the pasta to the pan and mix well.
Sprinkle with cheese and serve.
