Prepare the ingredients
Preheat oven to 400°F
Cut the chicken into cubes. Slice the shallot and the apple.
Mix the dijon, honey and 1 Tbsp. of olive oil (double for 4 ppl.) and set aside.
Prepare the dough
With oiled hands, stretch the dough gently, roughly 6 inches in diameter, avoiding tearing. Place the pizzas on a cooking tray lined with parchment paper.
Cook the chicken
In a large skillet over medium heat, sauté the chicken for 5 minutes. Add the shallots and continue cooking for 2 minutes.
Add the wine and cream, and stir. Remove from heat. Salt and pepper.
Assemble the pizza
Spread the honey mustard sauce over the pizza doughs and arrange the chicken and shallots on top. Sprinkle with the mozzarella cheese.
Bake for 10-12 minutes until the crust is golden.
Prepare the salad
In a medium bowl, combine the arugula and apples. Mix in the balsamic vinegar and the remaining oil.
Finish and serve
Serve the pizzas with the salad.
You can add a bit of the arugula on the pizzas for a delicious garnish
