Preheat oven at 400F
Prepare the ingredients
Cut the chicken into cubes. Slice the onion and the apple.
Mix the dijon, honey and half of the olive oil and set aside.
Prepare the dough
With oiled hands, stretch the dough gently roughly 6 inches in diameter, avoiding tearing. Place the pizzas on a cooking tray lined with parchment paper.
Cook the chicken
In a large skillet over medium heat, sauté the chicken for 5 minutes. Add the onions and continue cooking for 2 minutes. Add the wine and cream, and stir. Remove from heat. Salt and pepper.
Assemble the pizza Spread the honey mustard sauce over the pizza doughs and arrange the chicken and onions on top. Sprinkle with the mozzarella cheese. Bake for 10-12 minutes until the crust is golden.
Prepare the salad
In a medium bowl, combine the arugula and apples. Mix in the balsamic vinegar and the remaining oil.
Finish and serve
Serve the pizzas with the salad on the side.
