Cook the pasta
Bring a pot of water to a boil. Before adding the pasta, remove ½ a cup of boiling water and set aside in a medium bowl for later. Incorporate the farfalle pasta and cook 10-12 minutes or to al dente. Drain and set aside.
Prepare the cajun sauce
Meanwhile, dissolve ½ of the chicken broth cube in the medium bowl with the reserved water (step 1). Add the dairy blend for cooking, the parmesan cheese, the cajun spice mix and mix well.
Prepare the other ingredients
Finely slice the green onion and separate the white and green parts. Dice the tomato. Thinly slice the sun-dried tomatoes. Mince the garlic. Cut the chicken into 1-inch cubes and salt & pepper.
Cook the chicken
Heat 1 tsp of vegetable oil in a large skillet over medium-high heat. Add the chicken cubes and brown for 3-4 minutes. Add the garlic and the white part of the green onion and cook for 1- 2 more minutes.
Heat the Cajun sauce
Add the cajun sauce ot the skillet and heat for 3-5 minutes. Add pasta, the tomato and the sun-dried tomatoes. Mix well to coat everything with sauce.
Serve the pasta
Serve the chicken cajun pasta in bowls or plates and garnish with the green part of the onion. Enjoy!
