Prepare the ingredients
Mince the garlic and ginger (peeled). Finely slice the green onion and separate the white and green parts. Cut the chicken into 1-inch cubes. Slice the pepper and the carrot into matchsticks.
Cook the rice noodles
Bring a medium pot of salted water to a boil. Add the rice noodles and cook for 2-3 minutes. Drain, rinse in cold water and set aside.
Prepare the sauce
In a small bowl, whisk together the lime juice, soy sauce, sambal oelek and peanut butter. Set aside.
Cook the chicken Heat 1/2 of the vegetable oil in a skillet over medium-high heat. Add the chicken cubes and brown for 5 min.
Assemble the pad Thai
Add remaining vegetable oil, garlic, ginger, white part of the green onion, carrot and bell pepper to the skillet with the chicken. Cook for 3 min, stirring. Add the sauce and the cooked noodles and cook for 3 more min.
Serve the pad Thai
Mix well the pad Thai in the skillet and serve. Garnish with the green part of the green onion. Enjoy!
