Prepare the ingredients
Temper butter to room temperature.
Cut broccoli into small florets. Peel and dice stalk. Dice tofu. Chop shallot. Chop green onion.
Prepare the miso butter
In a bowl, combine miso with 1 tbsp of butter (double for 4 ppl.). Pepper to taste. Set aside.
Bring large pot of salted water to a boil. Add soba noodles and cook 6 minutes or until al dente. Drain and oil lightly.
Cook broccoli and tofu
In a large skillet, cook broccoli and tofu in 1 tbsp of butter (double for 4 ppl.) over medium-high heat for 5 minutes.
Add the miso
Add shallot, miso butter and water and cook 1 minute. Remove from heat.
Serve Serve on soba noodles and sprinkle with green onion and sesame seeds.
