Preheat BBQ or grill pan
Zest and juice the lemon. With a peeler, slice the cucumber in long strips. Grate apple. Chop mint in small pieces.
Make the sauce
Mix the pre-mixed sauce (yogurt, sriracha)* and the lemon juice.
Prepare the slaw
In a bowl, mix cabbage, gratted apple. lemon zest, sherry vinegar and the mint.
Cook the fish
Pat the fish dry, season with garlic and lemon spice mix, salt and pepper. Drizzle with oil and cook on the BBQ (or pan over medium high heat) about 3 minutes each side.
Grill the buns
When the fish is almost done, add the bun to grill (or broil in oven).
Assemble and serve
Build the burger by putting sauce, fish, cucumbers, a bit of the coleslaw and lettuce. Add baby kale to remaining coleslaw and stir. Serve burger with salad.
