Cook the rice
In a small pot, bring water for rice and the rice to a boil. Cover, reduce the heat to low and cook for 12-14 min or until all the water has been absorbed.
5 minutes before the end of the cooking, add **cauliflower rice** to the pot. Stir well.
Preheat BBQ or grill pan
Peel the mango and cut into cubes. Cut the lime into quarters. Cut the onion into cubes. Chop the cilantro. Cut each piece of tuna into 6 cubes.
Make the sauce
In a bowl, mix the sesame oil, the pre-mixed sauce (soy sauce, chili sauce)* and half the cilantro.
Assemble the kebabs
Using the wooden skewers, assemble the kebabs by layering the onion, mango and tuna. Brush with the sauce (keep some for the rice) and add a lime quarter at the end of the stick.
Grill the kebabs
On the bbq or a grill pan over medium high heat, grill the kebabs about a minute or 2 minutes on each side.
Make the rice and serve
Mix the remaining sauce, the cilantro, the edamame and the sesame seeds with the rice.
Serve with kebabs on top and garnish with crispy rice cereal. Squeeze the grilled lime on the kebab.
