Prepare the sweet potatoes
Preheat oven to 400
Peel and cut the sweet potatoes in wedges. Put the potatoes on a baking sheet lined with parchment paper, drizzle half the olive oil, and cook in the oven for 20 minutes, turning halfway.
Prepare the ingredients
Remove rosemary from stem. Slice the onion.
Make the patties
Mix meat with Montreal steak spices and for patties.
Cook the meat and grill onion
In an oiled pan over medium high heat, cook patties about 4-5 minutes on each side. Add onion rings and cook alongside, turning them halfway through cooking.
Build the burger
Remove patties and onions from pan. Grill the buns about a minute on each side, then assemble the burger by putting the mayonnaise, the patty, the onion, the blue cheese and the lettuce.
Make the sauce and serve
Mix the yogurt with pesto.
Serve the burger with the sweet potato fries and the dipping sauce.
