Setup

Preheat the oven to 400°F.

Cut the zucchini into rounds. Thinly slice the onion. Cut the olives and three artichokes in half.

Cook the onion

Heat a drizzle of oil in pan over medium heat. Add the onion and the zucchini. Cook for around 5 minutes until tender. Add the spinach and cook for another 2 minutes. Remove from the pan.

Make the pizza

Place the pita breads on a baking sheet. Spread some tomato coulis on the pita breads then split the rest of the ingredients equality on the pizzas. Reserve the oregano for garnish. Cook in the ove for around 8 to 10 minutes.

Serve with fresh oregano leaves. Bon appétit!
