Roughly chop the bok choy. Cut the mushrooms in quarters. Cut the lime into wegdes et finely chop the green onion.
Cook the pork
Heat a drizzle of oil in a pot over medium-high. Pat dry the pork if needed and season. Add the pork chops and the honey to the pot. Cook for around 2-3 minutes on each side until golden and slightly caramelized. Remove from the pot and slice into strips.
Make the broth
Add the water prepared for the broth to the pot. Bring to a boil and add the chicken stock cube. Add the star anise and half the green onion. Lower the heat and simmer for 3-4 minutes.
Add the other ingredients
Add the rice noodles, mushrooms, bok choy and sauce mix. Simmer 5-7 more minutes. You can add the pork slices to the soup at this step instead of serving them as a topping.
Plate your dish
Serve with lime wedges, green onions and pork strips. Bon appétit!
