Cook the rice

Bring the water for rice to a boil in a small pot. Add the rice, cover and cook over low heat for 10-12 minutes. Add salt and pepper.

Setup

Cut the tomato(es) into small cubes. Grate the carrot(s). Chop the cilantro. Crumble the tofu. Remove the leaves from the lettuce. Mix the mayonnaise and the sriracha (spicy).

Cook the tofu

Heat a generous drizzle of oil in a pan over medium-high heat. Cook the tofu and the spices for 3-4 minutes until brown. Add salt and pepper to taste.

Plate your dish

Garnish the tortillas with the tofu, the guacamole, the cilantro, the vegetables and the rice. Roll into a burrito. Serve with the spicy mayonnaise as a dip. Bon appétit!
