Bring a pot of salted water to a boil. Thinly slice the onion. Grate the carrot. Cut the tomato into small cubes. Chop the herbs and the garlic. Zest the lemon.
Cook the onion
Heat a drizzle of oil in a pan over medium heat. Cook the onion with salt, pepper and the sugar for 6-8 minutes.
Cook the pasta
Cook the pasta 4-5 minutes in the boiling water until tender. Drain and keep 1/4 cup of the cooking water (double for 4 ppl.).
Add the pork
Add the pork, garlic and carrot to the pan and cook 4-5 minutes. Add salt and pepper. Add the cooked pasta, cooking water, half of the yogurt, half of the sumac, the herbs, lemon zest and lemon juice. Mix 1-2 minutes. Add salt and pepper to taste.
Plate your dish
Serve the pasta. Crumble the feta on the pasta and garnish with the rest of yogurt, sumac and the tomatoes. Bon appétit!
