Separate some lettuce leaves from the head and shred the rest. Chop half the shallot and thinly slice the other half. Dice the tomatoes. Roughly chop the cilantro. Drain the sweetcorn.
Cook the patties
Mix the pork, the chopped shallot with the tex mex spice mix. Make one patty per person. Heat a drizzle of oil in a pan over medium heat. Add the patties and cook for around 5 minutes on each side. Top each of the patties with a slice of cheese. Cover to melt.
Make the salad
Mix the shredded lettuce, sweetcorn, tomatoes, sliced shallot (to taste) and cilantro in a large bowl.
Plate your dish
Assemble the burger by spreading mayonnaise and guacamole on both halves of the bun. Add the patty, a lettuce leaf and cilantro leaves. Serve with the salad. Bon appétit!
