Preheat the oven to 450°F.
Drain the chickpeas and mix them with the curry mayo. Cut the potatoes into fries. Cut the caulifower into florets. Roughly chop the lettuce. Slice the celery and the green onion.
Cook the caulifower and the fries
Place the potatoes onto a baking sheet covered with baking paper. Add a drizzle of oil, salt and pepper. Coat the cauliflower with BBQ sauce and then with the panko. Place onto the baking sheet. Cook in the oven for around 20-22 minutes. Turn over half way through.
Make the salad
Mix the chickpeas with the celeri, the curry sauce and the green onions. Season to taste. Serve onto a bed of lettuce.
Plate your dish
Serve the cauliflower wings with the ranch dressing, the fries and the salad. Bon appétit!
