Cook the vegetables
Preheat the oven to 400°F.
Slice the sweet potato(es) into thin rounds. Cut the cauliflower into small pieces. Mix with a drizzle of oil, the spices, salt and pepper. Put on a sheet pan lined with baking paper. Cook in the oven for 18-22 minutes.
Thinly slice the cucumbers and the shallot. Cut the tomatoes into quarters.
Plate your dish
Heat the pita for 1 minute in the oven. Serve all the ingredients on a plate with the pita bread. Bon appétit!
