Spanakopita is a dish from Greece and means a spinach puff pastry. For this recipe we reinvented the term with our roasted potatoes mixed with spinach, feta and oregano. They are served with sausages and roasted cherry tomatoes.

Setup

Preheat the oven to 425°F.

Cut the potatoes into small cubes. Roughly chop the spinach. Chop the onion and garlic.

Cook the potatoes

Put the potatoes, sausages and cherry tomatoes on a lined sheet pan. Drizzle with some oil. Add salt and pepper. Bake in the oven for 20-22 minutes.

Make the spinach mix

Heat a drizzle of oil in a pan over medium high heat. Cook the onion and garlic for 3-4 minutes. Add the spinach and the cream and cook 2 minutes. Add salt and pepper. Remove from the heat.

Mix the potatoes

When the potatoes are cooked, add to the spinach mixture. Adjust seasoning to taste.

Plate your dish

Serve the sausages with the tomatoes and the potatoes. Garnish with the crumbled feta cheese and oregano. Bon appétit!
