Cook the rice
Bring 2/3 cup of water to a boil (double for 4 ppl.)
Add the rice, cover and cook on low heat for 10-12 minutes.
Chop the tomatoes, the onion and the cilantro. Mix them in a bowl with salt and pepper to make your salsa. Slice the pepper. Drain and rinse the beans. Coarsly chop the lettuce.
Cook the beans
Heat a drizzle of oil in a pan over medium-high heat. Add the pepper, the chipotle(to taste, spicy!) and cook for a 2-3 minutes or until the pepper is tender. When the pepper is tender, add the beans and cook for another 2-3 minutes. Remove from the pan. Heat up the tortillas in the pan or in the microwave.
Plate your dish
Add a little bit of everything onto a tortilla then roll! Bon appétit!
