Cook the rice
Bring a pot with 1 cup of water to a boil (double for 4 ppl.).
Pour the rice and raisins, cover and cook over low heat for 10-12 minutes. Drain if needed.
Fry the lentils
Drain and rinse the lentils and dry as much as possible on a paper towel. Heat a generous drizzle of oil in a pan over medium high heat. Fry the lentils 6-8 minutes until they become a little crispy. Remove with a slotted spoon and transfer to a paper towel.
Meanwhile, thinly slice the radish and the onion. Chop the cilantro. Zest the lemon.
Cook the onion
Reduce heat to medium and add the onion and honey to the same pan as the lentils. Cook 6-8 minutes. Add salt and pepper.
Make the fried rice
Add the rice, spices and lentils and cook over medium high heat for 3-4 minutes. Adjust seasoning to taste. Add the zest.
Plate your dish
Serve the rice and garnish with the yogurt, radish and cilantro. Bon appétit!
