Preheat oven to 400F. Cut the eggplant in quarters and place them on a baking tray lined with parchment paper.
In a small bowl, combine the miso, the honey, 1/3 of the mirin sauce and ½ of the sesame oil. Brush eggplant with the mixture and bake for 25 minutes.
Meanwhile, mix in a large bowl ½ of the soy sauce, ½ of the remaining mirin sauce and the remaining sesame oil. Marinate the pork for 10 minutes in the sauce mixture.
Cut broccolis into pieces and steam.
In an oiled pan, cook the pork 15 minutes, taking care to turn it over to brown all sides. Deglaze the pan with the remaining soy sauce and mirin sauce. Serve the pork with eggplant and broccoli.
