Prepare sweet potatoes
Preheat oven to 400F°
Peel and cut sweet potatoes into large cubes and boil them in a pot of salted water for 12 minutes or until they are soft. Drain and set aside.
Prepare the chicken
Meanwhile, season chicken legs with the cajun spice. Add less than quantity provided if less spicy is preferred.
Prepare the veggies
Remove cilantro leaves from stems.
In a bowl, mix sweet potato cubes, cilantro leaves, garlic and honey. Drizzle with olive oil and season with salt and pepper.
Cook the chicken and veggies
Place chicken legs and vegetable mix onto a baking sheet covered with parchment paper.
Cook in the oven for 35 minutes.
Add the corn
Rinse and drain corn.
Add corn and tomatoes and bake for 5 more minutes
or until the chicken reaches an internal cooking temperature of 165 F.
Serve the chicken and the veggies.
